116 Noble is Chef Noble’s love letter to his beloved grandparents: Lucille (Dea) Noble and George (Dad) Noble, and the roots of his culinary journey that began at their Madison home 116 Elaine Drive.

While Chef Noble was the age of needing a chair to reach the stovetop, he was introduced to gardening and cooking with fresh ingredients from Dea and Dad. From Dea’s snap peas, cast iron skillet sweet potato pie, homemade biscuits, and salmon croquettes to Dad’s deerstew and muscadine wine.

For years, many weekends and summers were spent at the home his family lovingly called 116 Elaine.

Dea’s and Dad’s kitchen became Chef Noble’s first test kitchen. Their kitchen table became the first gathering place where family was encouraged to come and offer positive critiques as Dea would not have his developing skills discouraged. Encouragingly, his family suffered through burnt bologna or enjoyed cornmeal fried okra. This is where Chef Noble’s culinary dreams would take root.

From the root much would be produced: A silver, gold, City, and State medalist, graduating from culinary school, placing in international food championships, and receiving multiple business award nominations.

In 2013, Chef Noble had the distinct privilege of meeting five-time James Beard Award winning chef, Chef Tom Colicchio, who inspired Chef Noble to come home and curate unique food experiences to help grow the food culture in Huntsville.

The goal of 116 Noble, along with Chef Allen Noble, is to be intentional about curating memorable experiences to his hometown, Northwest Huntsville, so we welcome you to our table. Not just to offer positive critiques but to enjoy experiences, make memories, and to become family at 116 Noble.
